Introduction

¡@¡@The Amis food preparation instruments included wooden mortars pestles (wood and stone) steaming vats, cooking pots and split bamboo cooking baskets. The main materials were wood, stone and rattan.
¡@¡@Wooden mortars were used to dehusk rice and make "tulum" rice based delicacy or to grind dried beans or peanuts. Pestles were mortar accessories and can be divided into three kinds--stone, double pestle and single pestles. They were mainly used to dehusk and pound grains, rice and make tulum.
¡@¡@Pestles were mainly wooden, and there were also stone ones. New wood pestles could be easily made when worn but stone ones were more difficult to make and were more precious. Many are still preserved today.
¡@¡@Traditionally, the mortars and pestles were daily essential items owned by every Amis household. Today the number of Amis households using mortars and pestles has decreased drastically, with most used in special ceremonies, in cultural activities or in exhibitions.
