¡@¡@Traditionally, the Amis for whom farming was an important source of livelihood would each have at least one wooden mortar (square and round) and pestle (single, double and stone.) Mortars and pestles were basic food processing tools and a daily life essential. When people moved home, the mortars and pestles would be taken with them.
¡@¡@Pestles were mainly used to pound or dehusk cereals. Single pestles were used to crush chestnuts, while double wood pestles were used to dehusk rice and pound cereals. Only women could dehusk rice. Stone pestles were round mortar accessories but were not used to dehusk rice. When making rice cake, the Amis would first boil the sticky rice, place it in the round mortar and then pound it, because the rice wouldn't stick to the stone pestle.
¡@¡@In addition, when single pestles and square mortars were used to crush chestnuts, each woman would have at least two pestles and 2-3 woman would work together. Experienced women would beat out rhythmic pestle music.
